Environmental Scan of Retirement Home menus, alcohol and fall prevention policies

We are looking to conduct an environment scan of local retirement homes. We would like to learn more about their menus (healthy eating policies), their alcohol and their fall prevention policies. Has anyone else done any work in this area?
